The Algonquin Resort St. Andrews by-the-Sea has named Ricardo Dotti as its executive chef, leading the resort’s four dining destinations: Braxton’s Steakhouse & Bar, The Passamaquoddy Veranda, Right Whale Pub, and Aperitivo 19.
Born in London, England, to an Italian culinary heritage family and a Mexican mother, Dotti brings a uniquely multi-cultural perspective that has shaped his global approach to cuisine, leadership, and guest experience.
With more than 25 years of global culinary leadership, Dotti brings a proven track record of building world-class dining programs and leading high-performing kitchen teams. Throughout his career, he has held leadership positions with leading international hospitality and cruise brands, including Viking Cruises, Silversea Cruises, and Oceania Cruises. He has contributed to the opening and re-positioning of more than 30 international dining concepts across Europe, North America, and Asia, overseeing portfolios exceeding $100 million.
